This week, we've asked our neighbors and friends at Kaleidoscope Juice how they beat the summer heat. So when they're not whipping together delicious green smoothies and acai bowls, co-creator Alexandra Maw loves these uber healthy, super tasty, and ridiculously simple Lemon Truffles.
Lemon Drop Truffles
Ingredients: 2 cups coconut dates zest and juice of 2 organic lemons 1 tsp crushed pink Himalayan salt 3 cups shredded coconut (unsweetened), divided 3/4 cup ground Brazil nuts (process in dry Vitamix container or food processor) 5 tbsp coconut oil 1 1/2 tsp vanilla extract 1/2 cup lucuma powder 2 tbsp maca powder.
Directions: 1. Place dates, lemon zest/juice and salt in large bowl. Can start mushing with a fork, then use hands. Add 1 cup of coconut, lucuma, maca and ground Brazil nuts. Drizzle coconut oil and vanilla over. Mix well.
